Classic Sweet and Sour Pork

                                                       A truly Chinese restaurant classic that gives a well-balanced taste and colour.

Ingredients

Pork fillet, cut into bite-size pieces  250g
Red pepper, diced  ½
Rings canned pineapple, chopped 2
Vegetable oil for deep frying, batter and stir frying

Marinade

Battter mix
Self raising flour  40g
Corn flour  1 Tsp
Cold water  60ml
Vegetable oil  2 Tsp

Method

1 Whisk together the batter mix until smooth and set aside for 15 minutes before adding the vegetable oil.
2 Dip the pork in batter before deep frying in hot oil until the batter is golden and crisp. Drain and set aside.
3 Stir fry the pepper and pineapple for 2 minutes. Add Sweet and Sour Sauce, pineapple juice and cooked pork until heated through. Serve immediately.

Tips

1 Marinate the pork with 1 tbsp Lee Kum Kee (Professional) Gluten Free Oyster Sauce for 10 minutes before cooking to give a more penetrating meaty flavour.
2 Use pork shoulder as a cost effective choice that can provide more texture too!
