Roast Cauliflower in Sweet & Spicy Sauce

Ingredients

Cauliflower, cut into florets 1500g
White onion or shallots, cut into segments 250g
Vegetable oil 70g
Garnish:
Parsley, torn or roughly chopped 50g

Sauce Mix

Red chilli, finely diced 20g
Garlic, finely chopped 17g
Ginger, finely chopped 10g
Salt 6g
Rice vinegar 40g

Method

1 Heat oven to 180°C. Once ready, place cauliflower and half of the vegetable oil in oven tray, spread evenly and cook for 8 minutes.
2 Mix garlic and ginger with the rest of vegetable oil and sauce mix in a bowl. Add these to the cauliflower and mix well. Return to oven and cook for another 10 minutes. Turn the cauliflower once in the middle of cooking.
3 Remove from oven and serve hot.
4 Garnish with flat leaf parsley.
5 Serve with cooked rice or noodles.
