Prawn Salad with Thai Sweet Chilli Dressing

Ingredients

Cooked king prawns 250g
Cucumber, cut into half-moon shape 1/3
Papaya, cut into small slivers 1
Coriander for garnish
Peanuts, chopped and fried for garnish

Sauce Mix

Lime Juice 40g
Sugar 30g
Fish sauce 15g
Lemon grass, finely chopped 1 stem

Method

1 Mix prawns, cucumber, papaya and dressing in a bowl.
2 Cover and refrigerate for 1 hour
3 Sprinkle with coriander and chopped fried peanuts.
4 Serve cold
Serves   2 as main or 4 as starter
