Braised Chicken Wings in Fruity Plum Sauce

Ingredients

Chicken wings (mid joint and drumette separated) 2500g
Ginger, julienned 25g
Vegetable oil 35g
Spring onion, 3 cm baton 8
Water 250g

Method

1 Put chicken wings in marinade and set aside for at least 2 hours.
2 Remove chicken wings from marinade. Heat wok to medium heat, then add vegetable oil. Add spring onion and garlic. Sauté till fragrant, remove and set aside.
3 Add chicken wings, browning them for about 2 minutes on each side.
4 Add water, any leftover marinade and spring onion and garlic, bring to a boil. Cook till sauce coats chicken wings.
5 Remove wok from heat and serve chicken wings hot.

Tips

1 This dish can either be a snack or part of a meal with other dishes.
2 It can be cooked in a 180°C pre-heated oven. Simply place everything in a roasting tray and cook for 30 minutes.
